Happy Canada Day Weekend! Here’s another fun and refreshing summer cocktail to add to your weekend plans!

We love lightened-up cocktails that help keep you aligned with your goals while not feeling restricted or cut off from all that summer has to offer.

This cocktail is made with fresh (or frozen) raspberries, lemon juice, vodka and just a touch of sweetener. This recipe calls for regular sugar – but try swapping it out for maple syrup, honey or agave! You can also adjust the sweetness based on your preferences – and even make this a mocktail if you are looking to stay clear of alcohol. ⁠

Make a batch of this cocktail to enjoy with family and friends – just top with sparkling water when ready to serve. ⁠

Ingredients

  • 1 pint fresh or frozen raspberries
  • 2 lemons
  • 2 tablespoon sugar
  • 4 ounces vodka
  • Ice
  • 16 ounces of lemon sparkling water
  • Raspberries and lemon slices for garnish

Instructions

  1. Muddle ¾ of the raspberries with the sugar and lemon juice until the berries are crushed in the wide mouth jar. Add the vodka.
  2. Add a handful of ice cubes to the jar. Close the lid and shake vigorously.
  3. Using a strainer, pour about 4 ounces of the raspberry lemon vodka mixture into each of the smooth-sided jars. Top each with 4 ounces of sparkling water. Garnish with raspberries and lemons. Serve immediately.
