FOOD FRIDAYS: Maple-Ginger Cider Switchel

Slightly spicy and slightly sweet -this Maple Ginger Cider Switchel is the perfect drink to serve at your next holiday get-together! ⁠

With fresh ginger and apple cider vinegar – not only is this mocktail delicious but it also has good-for-your-gut properties!

Maple syrup adds a touch of sweetness (and a Canadian flare!) without being overpowering. Top it off with club soda and a mint sprig for an ultra-easy and delicious mocktail. ⁠

Make a big batch ahead of time to take the stress out of holiday party planning.

Ingredients

  • 1 5″-piece fresh ginger (about 6 ounces)

  • ½ cup apple cider vinegar

  • 3 tablespoons pure maple syrup

  • 1 tablespoon fresh lime or lemon juice

  • 4 cups water or club soda

  • Mint sprigs (for serving)

Directions:

  1. Pass ginger through a juicer (you should have about ⅓ cup). Combine ginger juice, vinegar, maple syrup, and lime juice in a large pitcher and stir until maple syrup is dissolved. Chill until cold.
  2. To serve, dilute with water and pour switchel into ice-filled glasses; garnish with mint.
  3. Do Ahead: Base can be made 1 day ahead. Keep chilled.
