FOOD FRIDAYS: Healthy Pumpkin Spice Latte ⁠

Stop spending all your money on sugary drinks and try out this Healthy Pumpkin Spice Latte! A riff on a Starbucks favourite, this recipe won’t disappoint!⁠

With this recipe, you won’t have to sacrifice your diet and miss out on all the Fall classics and festivities. This version uses only 5 simple ingredients, with no refined sugars or preservatives. Coming in at almost a quarter of the calories and less than a 1/3 of the sugar compared to the traditional Starbucks treat, this lightened-up version is well worth a try. ⁠

Better yet, this recipe is super affordable and can be made on the stovetop or in a blender. Feeling an iced latte instead? Simply whisk together the ingredients and pour over ice. Add a dollop of coconut whipped cream on the top for an even more decadent treat. ⁠

Ingredients:

  • 1/2 cup milk (4 ounces; any type you prefer)
  • 1/2 cup brewed coffee (4 ounces)
  • 1 tablespoon pumpkin puree (19 grams)
  • 1 tablespoon maple syrup (20 grams; plus more to taste)
  • 1/4 teaspoon pumpkin pie spice

Toppings (optional)

  • coconut whipped cream
  • cinnamon

Directions: 

  1. In a small saucepan over medium-high heat, combine the ingredients and use a whisk to stir, incorporating everything smoothly.
  2. As soon as the mixture starts to simmer, stir well to make sure it’s evenly warmed up, then pour into a mug and serve right away. You can adjust the flavouring to taste, adding more maple syrup (I like an extra 1/2 tablespoon), or more spice, depending on your preference. You can also add more coffee for a stronger coffee flavour. This recipe is best served warm right away, as the pumpkin will start to separate as it sits, but you can simply give it a stir to reincorporate everything again.

Notes
Prefer a stronger coffee flavour? You can make a blender version instead by combining 1 cup of brewed coffee, 1 teaspoon almond butter, 1 tablespoon pumpkin puree, 1 tablespoon maple syrup, and 1/4 teaspoon pumpkin pie spice. Blend until smooth and creamy, and serve right away for a more concentrated coffee flavour that tastes like it was made with espresso.
