Easy-peasy to make, these granola bars are satisfying and full of antioxidant power!

Ingredients

  • 1 cup cashew butter
  • 1/4 cup pumpkin seeds
  • 2 tbsp chia seeds
  • 3/4 cup goji berries, soaked
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 1/2 cups gluten-free rolled oats
  • 1/3 cup cacao nibs
  • 2 tbsp crushed cashews

Instructions

  1. Soak the berries in filtered water for 2 hours.
  2. Line an 8″ x 8″ baking pan with unbleached parchment paper.
  3. In a large mixing bowl, stir together the cashew butter, honey, salt and vanilla.
  4. Drain and rinse the goi berries and add to bowl.
  5. Add the chia seeds, oats, cacao nibs and crushed cashew. Stir until the mixture starts to adhere together.
  6. Dump the mixture into the pan and press firmly to flatten evenly. Use a second piece of parchment and the back of a large spoon to flatten further.
  7. Chill for at least 1 hour, then slice into bars.
  8. Store bars in the fridge for a week.
