Superfood Backed Salmon

Ingredients:

  • 3-4 salmon fillets
  • 2 cups brussels sprouts, quartered
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup olive oil, divided
  • 3 Tbsp. balsamic vinegar
  • 3 cloves minced garlic
  • ½ tsp. black pepper
  • Sea salt
  • 2 lemons (1 juiced, 1 sliced)

Instructions:

  1. Preheat oven to 400 degrees F
  2. Place salmon fillets on a lined sheet pan
  3. Place brussels sprouts around the salmon
  4. Generally, sprinkle sea salt on salmon and veggies
  5. Place blueberries in a bowl, and mash with a fork
  6. Add in ¼ cup of olive oil, ¼ tsp. salt and pepper, garlic, and balsamic vinegar. Mix all together
  7. Drizzle another 2-3 Tbsp. olive oil over your salmon and brussels sprouts
  8. Spoon the balsamic blueberry mixture over the salmon fillets
  9. Squeeze fresh lemon on the salmon and veggies, and place lemon slices. Sprinkle with extra black pepper.
  10. Place in oven and bake for 15 minutes
  11. Broil for 1-2 minutes extra to make everything crispy on the outside
  12. Remove from oven, serve and enjoy!
