Food Fridays: Creamy Strawberry Lime Popsicles ⁠


Beat the heat with these Creamy Strawberry Lime Popsicles 🌞 Ditch the ultra-sugary and processed summer treats for something a little healthier.⁠

Homemade popsicles may seem intimidating or like a lot of work at first, but with just 5 ingredients, this recipe could not be easier. Using fresh strawberries makes this recipe even better, but frozen fruit will also do! Full-fat coconut milk makes these popsicles creamy and rich (not icy like some)!⁠

You can also change up the fruit in this recipe – blueberries, mango, or a combination of a few fruits would all work great! ⁠

Ingredients

  • 1 pound strawberries, hulled and cleaned
  • 1/2 cup full fat coconut milk
  • 1/4 cup lime juice
  • 1/2 cup maple syrup
  • zest of 2 limes

Instructions

  1. Add the strawberries, full-fat coconut milk, lime juice, and maple syrup to a high-powered blender.
  2. Blend until completely smooth and creamy.
  3. Next, add the lime zest and stir until well combined.
  4. Transfer the mixture to popsicle molds and freeze until solid.
  5. Drizzle 1 tablespoon of the marinating oil over the salad and toss to coat. Garnish the salad with torn fresh mint leaves, additional black pepper and some grated orange zest.

Notes

You can use frozen strawberries too, just be sure to thaw them fully before blending.
