Date and Nut Butter Easter Eggs

Ingredients:

1 cup pitted dates

2/3 cup water

½ cup peanut butter (or a nut or seed butter of your choice)

1 cup coconut flour

½ teaspoon sea salt

4 oz dark chocolate, melted

Toppings:

Hemps seeds, cacao nibs, chopped nuts, or chopped seeds, sprinkles, etc.

Instructions:

  1. In a food processor, blend the dates and water until smooth
  2. Add the peanut butter and blend again
  3. Transfer to a bowl.  Stir in the coconut flour and salt
  4. Press into a silicone egg mold.  Freeze for 30 minutes.
  5. Flip / remove from the mold
  6. Coat in melted chocolate
  7. Sprinkle with toppings of your choice
  8. Refrigerate until the chocolate is set (a few minutes) enjoy!
