This Watermelon Feta Salad is a fresh, flavourful way to enjoy what’s in season.

Watermelon is over 90% water, making it a great source of hydration. It’s also rich in antioxidants like lycopene and vitamin C, which can support skin health and protect against oxidative stress. The mint and lime bring digestive support, while the cucumber adds a little extra fiber. Feta rounds it out with healthy fat and protein to help support blood sugar and hormone balance.

This salad works well as a side dish, but it’s easy to turn into a light meal by adding grilled chicken, lentils, or quinoa. No cooking required—just toss and serve.

Ingredients

Dressing 

  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • ½ garlic cloveminced
  • ¼ teaspoon sea salt

For the Salad

  • 5 cups cubed watermelon
  • Heaping 1 cup diced English cucumber
  • ¼ cup thinly sliced red onion
  •  cup crumbled feta cheese
  • 1 avocadocubed
  •  cup torn fresh mint or basil leaves
  • ½ jalapeño or serrano pepperthinly sliced, optional

Directions

  1. Make the dressing: In a small bowl, whisk together the olive oil, lime juice, garlic and salt.
  2. Arrange the watermelon, cucumber, and red onions on a large plate or platter. Drizzle with half the dressing. Top with the feta, avocado, mint, and serrano pepper, if using, and drizzle with remaining dressing. Season to taste and serve.
