- 6 Carrots shaved
- 1 Tablespoon Sesame Oil
- 2 Tablespoons Rice Vinegar
- 2 Tablespoons Low Sodium Soy Sauce or Tamari
- 2 Tablespoons Honey
- 2 Tablespoons Fresh Lime Juice
- 2 Tablespoons Chopped Parsley or Cilantro
- 1 Teaspoon Sesame Seeds

To make this salad, start by preparing the carrots. Use a peeler to peel the carrots into ribbons and add them to a bowl. Set them aside.

Next, add the sesame oil, rice vinegar, soy sauce or tamari, honey, and lime juice to a small bowl. Whisk them to combine.

Pour the dressing over the peeled carrots and toss until the carrots are fully coated in the dressing.
