Summer is here, bringing with it all the gatherings, parties, and festive get-togethers. With so many events on the calendar, it can be challenging to stay on track with your health goals. One of the best strategies is to bring along a dish that’s both healthy and tailored to your dietary needs. Not only does this ensure you have something nutritious to enjoy, but it also introduces your friends and family to delicious, health-conscious options.

A perfect example is this high-protein, Healthy Cottage Cheese Buffalo Chicken Dip, a tasty twist on a classic favourite that’s sure to be a hit at any summer celebration.

It comes together in less than 10 minutes, and can be served alongside rye crisp bread, crackers, sourdough bread, vegetables and more. And just because this is a “lightened-up” version, does not mean it compromises on flavour! Try it out this weekend!

Ingredients

  • 1 cup cottage cheese
  • tablespoon olive oil
  • ¼ cup buffalo sauce adjust to taste preferences
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and black pepper to taste
  • ¼ cup cheddar cheese shredded
  • 1 cup shredded chicken breasts (about ½ lb or 1 boneless, skinless chicken breast) see text above for cooking tips
  • 1 cup red bell pepper diced
  • 2 green onions sliced

Directions

  1. Preheat your air fryer to 375°F and grease a medium sized oven safe ceramic dish.
  2. Add your cottage cheese, olive oil, buffalo sauce and spices to a food processor or high-powered blender and blend until smooth. Adjust spices to taste preference
  3. Pour your blended cottage cheese mixture into a greased oven safe dish, add your shredded chicken, cheese and chopped red bell pepper and mix until evenly distributed. Top with additional shredded cheese.
  4. Air fry for 8-10 minutes or until cheese begins to brown. The dish will be HOT when you remove it so please wear oven mitts!
  5. Serve with pita, chips, crackers or veggies for a balanced snack!

*This recipe can also be made in a standard oven if you do not have an air fryer.
