Ingredients
- 1 can of tuna (we used Rio Mare tuna in olive oil)
- 4-6 green olives, diced
- 1 tsp capers
- 1 tbsp white or red onion, diced
- 1 celery stalk, diced
- 2 tbsp plain unsweetened greek yogurt
- 1 tsp dijon mustard
- 1/2 tsp garlic, minced
- 1 tbsp lemon juice
- salt and pepper to taste
- Lettuce for serving
Direction
- Drain and empty the can of tuna into a large bowl. Add in the celery, onion, capers and olives.
- In a separate bowl, add in the greek yogurt, lemon juice, dijon mustard, garlic, salt and pepper. Mix until combined.
- Add the greek yogurt mixture into the tuna mixture, and mash to combine.
- Serve in lettuce boats, over salad, with crackers, or eat on it’s own!
