Ingredients

  • 1 can of tuna (we used Rio Mare tuna in olive oil)
  • 4-6 green olives, diced
  • 1 tsp capers
  • 1 tbsp white or red onion, diced
  • 1 celery stalk, diced
  • 2 tbsp plain unsweetened greek yogurt
  • 1 tsp dijon mustard
  • 1/2 tsp garlic, minced
  • 1 tbsp lemon juice
  • salt and pepper to taste
  • Lettuce for serving

Direction

  1. Drain and empty the can of tuna into a large bowl. Add in the celery, onion, capers and olives.
  2. In a separate bowl, add in the greek yogurt, lemon juice, dijon mustard, garlic, salt and pepper. Mix until combined.
  3. Add the greek yogurt mixture into the tuna mixture, and mash to combine.
  4. Serve in lettuce boats, over salad, with crackers, or eat on it’s own!
